Introduction

This show-stopping platter bridges traditional Indian festival flavors and elegant Japanese presentation without touching a stove. It showcases two elements: a silky, eggless cheesecake featuring a vibrant pink rose layer beneath a refreshing green meetha paan cream, paired with clever dessert sushi. The sushi utilizes a nutty, protein-rich sattu and roasted peanut dough wrapper to encase sweet mango, fresh paneer, and a aromatic gulkand-mint cream filling, creating an incredible harmony of textures and flavors.

Steps

1.Set the Cheesecake Base:15 mins.

Mix the crushed digestive biscuits with melted butter. Firmly press the mixture into the bottom of a 4-inch ring mold or dessert tub. Place it in the fridge to chill.


2.Pour the Rose Cheesecake Layer:30 mins.

Whisk 50g cream cheese, 10g sugar, rose syrup, rose water, and pink color. Fold in 30g whipped cream, then stir in the dissolved gelatin/agar-agar. Pour smoothly over the biscuit base and refrigerate for 25-30 minutes until semi-set.


3.Pour the Paan Cheesecake Layer:6-8 hours.

Whisk 50g cream cheese, 10g sugar, 10g gulkand, the blended paan leaf paste, rose water, and crushed fennel seeds. Fold in 30g whipped cream, then blend in the second batch of dissolved gelatin/agar-agar. Gently pour over the pink rose layer. Chill in the fridge for 6–8 hours or overnight.


4.Knead the Sweet Sattu Sushi Dough:10 mins.

While the cheesecake sets, prepare the sushi. In a bowl, mix sattu, peanut powder, and 1 tbsp powdered sugar. Add the rose water and curd/water bit by bit. Knead into a smooth, pliable dough. Cover and rest for 10 minutes.


5.Roll and Fill the Sushi:15 mins.

Place a sheet of cling film or butter paper on your counter. Roll the sattu dough into a thin, neat rectangle. Mix the hung curd, gulkand, and a tiny pinch of chaat masala together, then spread it thinly over the dough. Place your mango strips and paneer strips in a straight line along the edge closest to you. Sprinkle with chopped mint and a drizzle of honey.


6.Roll, Chill, and Slice:15 mins.

Using the cling film to lift the dough, roll it away from you tightly into a firm log. Wrap the log tightly in the film and place it in the fridge for 15 minutes to firm up. Once chilled, use a very sharp knife to slice it into clean, bite-sized sushi rounds.


PRESENTATION TIPS

  • The Platter Setup: Unmold your gorgeous two-layer cheesecake and place it elegantly on one side of a large wooden or slate serving board.

  • The Sushi Arrangement: Arrange the colorful Sattu Dessert Sushi pieces in a neat, overlapping diagonal line or a semi-circle around the cheesecake.

  • The Final Flourish: Top the center of the cheesecake with a glossy dollop of gulkand. Scatter chopped pistachios, sweet mukhwas, and vibrant dried rose petals across the entire platter. Tuck a few fresh mint leaves near the sushi rounds and add a sliver of edible gold foil to the cheesecake for a spectacular festive finish!

Ingredients

PART 1: The Sweet Sattu Dessert Sushi
  • For the Outer Dough Wrapper:
    ½ cup Sattu (roasted gram flour)
    ¼ cup Roasted peanut powder
    1 tbsp Powdered sugar
    ½ tsp Mustard oil (optional, or swap for melted ghee for dessert profile)
    ¼ tsp Rose water
    1–2 tbsp Curd or water (as needed to knead)

  • For the Fruit & Cheese Filling:
    ½ cup Fresh mango (cut into thin, long strips)
    ½ cup Fresh paneer (cut into thin, long strips)
    1 tbsp Chopped mint leaves
    1 tbsp Honey

  • For the Sweet Fusion Spread:
    2 tbsp Hung curd dip
    10 g Gulkand (rose petal jam)
    A pinch of chaat masala (for that classic sweet-and-tangy kick)

PART 2: The 2-Layer No-Bake Rose & Paan Cheesecake
  • The Biscuit Base (50 g):
    35 g Digestive biscuits (crushed)
    15 g Melted butter

  • 🌹 Layer 1 – Rose Cheesecake (125 g):
    50 g Cream cheese
    30 g Whipping cream (whipped to stiff peaks)
    10 g Powdered sugar
    ½ tsp Rose syrup or rose extract
    ¼ tsp Rose water
    2 g Gelatin (or 2.5 g agar-agar, dissolved in 1 tbsp warm water)
    1 drop Pink food color (optional)

  • 🍃 Layer 2 – Paan Cheesecake (125 g):
    50 g Cream cheese
    30 g Whipping cream (whipped to stiff peaks)
    10 g Powdered sugar
    10 g Gulkand
    1 Fresh paan (betel) leaf, blended smoothly with 1 tsp cream
    ¼ tsp Rose water
    ⅛ tsp Crushed fennel seeds (saunf)
    2 g Gelatin (or 2.5 g agar-agar, dissolved in 1 tbsp warm water)
    1 drop Green food color (optional) 

Platter Garnish (For Both)
  • Extra gulkand, dried rose petals, chopped pistachios, sweet mukhwas (candied fennel), mint leaves, mango cubes, and optional edible gold foil.
