Khus, a herb, is the ultimate summer cooler and has been in use since time immemorial. It is a species of grass called vetiver and has a lovely woody aroma, reminiscent of sandalwood. The grass is soaked overnight to extract maximum flavour and then spinach powder is added for colour. A glass of chilled Khus sherbet is the best way to beat the scorching heat.
